Boiled Mud Crabs

Before cooking, you should tie the crab even if you have already killed it. This will stop the crabs throwing their claws. If the claws are thrown (or dropped off) some of the meat will boil out of the shell and your crab will be half empty when you go to eat it.

Place salt water into the large pot and bring to the boil. Place the crab into the boiling water and bring to the boil again.

Boil a large crab about 20 minutes and a small one around 15 minutes.

When cooked, remove the crab from the water and allow it to cool. If you are out in the bush, place a clean teatowel over the crab to prevent spoilage by insects.
