Char-grilled Blackfish with Chive Oil & Polenta


1Kg blackfish or luderick fillets
Baby rocket leaves, to serve

Chive oil

100ml extra virgin oil
2 Bunches fresh chives, chopped
Pinch rock salt
Pinch Masterfoods black peppercorns, freshly ground


30G butter
1 Small onion, finely chopped
800ml milk
90G polenta
Masterfoods black peppercorns, freshly ground


To make chive oil, mix all chive oil ingredients together and set aside (for at least 4 hours). Ideally make the chive oil a day before use.

To make polenta, heat butter and onion in a medium-sized saucepan for 2–3 minutes until transparent, pour in milk and bring to boil. Whisk in the polenta and continue to whisk until thickened. Season to taste with salt and pepper.

Season fish and brush with olive oil. Char-grill until just cooked. Serve by spooning soft polenta on a serving plate, add fish and drizzle chive oil over the top. Place baby rocket leaves around fish.
