Lamb Chop Hot Pot

Ingredients

Lamb Loin Chops
1 Large Onion, chopped
2 Carrots, chopped
2 Celery stalks, chopped
2 Potato’s, chopped (or substitute with sweet potato)
1 Capsicum, chopped
2 Tomato’s, diced
2 Beef Stock Cubes
2 Cups Water
4 Tbsp S/R Flour seasoned with Salt & Pepper
1 Tbsp Oil

Method

Trim the fat off the chops, brown in the oil in the large inner pot on your stove or portable cooker then remove and set aside. Brown the onion in the same inner pot and stir in the flour, water and stock cubes. Now return the chops to the pot and add all remaining ingredients and bring to the boil, now reduce the heat and simmer for 10 mins. Take off the heat, put the lid on and place into the Dream Pot and leave to cook for 2 hours.

Ingredients

½ Cup Rice
Tblsp Sugar
½ Tsp Vanilla
2 Cups Milk

Method

Combine all ingredients in the small inner pot and bring to the boil on your stove or portable cooker, now reduce the heat and simmer for a couple of minutes. Take off the heat, put the lid on and place into the Dream Pot on top of your Lamb Chops and leave until the lamb chops are ready. Serve topped with tinned or fresh fruit, sugar or cinnamon.
