4 fillets of bream
1 plastic bag
½ tspn bi-carb soda
Oil for deep frying
Water (enough to make mixture smooth)
2 cups flour
Place 1½ cups of flour and the bi-carb soda in a bowl and mix. Add water, stirring all the time to avoid lumps, when the mixture is nice and smooth place it in the fridge for 1 hour.
Dry the filleted fish with a paper towel.
Place ½ cup of flour in plastic bag. Now place the filleted fish into the bag (one at a time) and shake. When the fillets are coated all over remove them and dip them into the batter, then straight into the hot oil.
The oil should be very hot but not smoking. If it is too hot it will burn the batter before the fish is cooked. If you are not too sure, test it with a little batter and it should bubble vigorously.Back to Top
