When using a fish grill do not skin the fish. Place the whole fish in the grill and baste with butter, this not only adds flavour but stops the fish from burning before cooking. Keep basting and turning fish until it turns a golden brown and the skin starts to bubble.

This is a very simple way to cook fish, but when cooked like this over an open fire in the bush you will find the fish takes on a flavour all its own.
