Satay Lamb Skewers

Ingredients

¼ cup peanut butter
¼ tsp chilli powder or Tabasco sauce
¼ tsp ground ginger
Juice of one lemon
¾ cup canola oil
1 tbs brown sugar
1 kg boned shoulder of lamb
12 bamboo skewers pre-soaked in ice water

Method

Mix all ingredients for marinade in a bowl.

Cut lamb into 2 cm cubes and place into marinade for 1 hour. Reserve some marinade for pouring over cooked skewers.

Heat barbecue grill to medium-hot.

Thread lamb onto skewers.

Cook skewered meat on grill barbecue for 12-15 minutes until cooked through and brown, turning frequently.

Serve with rice or as finger food.
