Sesame Barbecued Prawns
1 kg large prawns
¼ cup olive oil
¼ red or white wine
4 shallots, finely chopped
1 tsp grated lemon zest
½ tsp cracked black peppercorns
12 bamboo skewers, pre-soaked in water
½ cup sesame seeds
Peel and de-vein prawns. Leave the shell on the tail end.
Combine oil, wine, shallots, lemon zest and pepper. Mix well.
Thread the prawns onto bamboo skewers (about 4 per skewer) so that they can lay flat.
Place the skewers in a shallow dish and pour the marinade over.
Toast the sesame seeds in frypan.
Sprinkle the toasted sesame seeds over prawns each side, pressing then on well. Refrigerate for about 30 minutes.
Place on the hotplate until opaque.Back to Top
