Short Ribs in Cola
1–1-1/2 kg of short ribs, cut into strips
5 cm fresh root ginger, sliced
4 cloves garlic, sliced
1 ripe tomato, roughly chopped
1 tbs oil
1 cup cola
2 tbs spicy chutney or barbecue sauce
2 tbs brandy or sherry
Salt and pepper to taste
Crush ginger, garlic, tomato and oil in a pestle and mortar to form a paste. Add the paste to the rest of the ingredients and marinate the ribs overnight.
Light the grill or coals. Barbeque the ribs over medium heat for 10–15 minutes, basting all the while with the marinade. Turn the heat down if the marinade starts to burn.
Wrap half of each rib with tin foil to create tasty finger foods for picnics and beach parties.
