Smoked Pork Ribs


1-2 kg pork ribs
½ tbs salt
¼ cup brown sugar
2½ tbs chilli powder
1½ tbs ground cumin
2 tsp cayenne pepper
2 tsp black pepper (freshly ground)
2 tsp garlic powder
2 tsp onion powder


Mix ingredients and rub mixture on meat 2 hours before cooking. Allow meat to reach room temperature.

Cook ribs for 3 hours at 107˚C in preheated smoker using hickory, one load, ½ cup at the beginning of the smoking period.

After 3 hours remove the ribs and wrap in heavy foil return to the smoker and cook for an additional 1–1½ hours.

Serve with your favourite BBQ sauce.
