Smoked Scalloped Potatoes
4-6 potatoes (baking)
2 small sweet potatoes
1 purple salad onion
200 ml thickened cream
1 cup of grated tasty cheese
1 tsp garlic salt
Cracked black pepper to taste
Wash and slice potatoes and onion into 1/4” slices.
Place in a shallow casserole dish layering vertically left to right alternating the potatoes and onion.
Mix the cream, garlic salt and pepper and pour evenly over the mix in the dish. Sprinkle the cheese over the top of the mix.
Place in the smoker on the bottom shelf for 1–2 hours or until the white potato is soft.
Start the smoke at the beginning of the time period only, approx 1/3 of a cup of chips.
